Nice Little Tuesday is a hospitality consulting studio working with owners and operators to act as an extension of their team. Our skills and services range from concept development, and project management to financial strategy, and our mission is to help our partners achieve their company goals - whatever they may be.
Who We Are
Vanessa Miller is a chef and operations strategist with more than 18 years of experience in the food and beverage industry. Miller’s unique perspective on restaurants and hospitality combines front-of-house and back-of-house management experience with an analytical approach to operations, fueled by Economics and Political Science training from Tufts University, where she also played basketball. Starting in restaurants at the age of 16, Miller quickly climbed the ranks and, with no formal culinary training, transitioned to the kitchen where she discovered her passion for food and honed her culinary talent. In 2013, at the age of 24, Miller became the youngest female Executive Chef in New York City when she opened The Dalloway in SoHo. Guided by a ‘team-sport-inspired’ leadership philosophy, Miller has executed creative and sophisticated menus, led diverse teams, and managed operations in a variety of leadership roles in NYC, including Corporate Director of Food and Beverage, Director of Restaurants, and Director of Culinary Operations.

Throughout her career Vanessa has built up an extensive network of industry experts, who she continues to work closely with and pulls into projects on a case by case basis.

If there's one thing we know from years spent in the industry, its that the only way to get things done is to get your hands dirty - we'll be right there shoulder to shoulder with you getting the job done.
What's in It for You
Three words: economies of scale. We recognize that not all independent brands can carry the financial burden of corporate infrastructure, but that doesn't mean they wouldn't benefit from the outputs. That's where we come in - our goal is to provide the benefits of the back office without the overhead.
